The cheat meal of all cheat meals. This recipe is indulgent, delicious, and perfect for tailgates and potlucks.
A family friend made something similar for a graduation party years ago and since then my mom has been experimenting, combining, and tweaking various recipes until she came up with the perfect concoction. I’ve been asked by so many friends to share this recipe, so I figured I’d share it with you all as well! Enjoy!
1 lb chicken - cooked & cut into 1/2” pieces (can also use chicken tenders or Buffalo chicken tenders - Aldi sells these in the frozen section!)
1 lb macaroni
2 T butter
2 T flour
1 c chicken stock
3 c heavy or whipping cream
1 lb sharp cheddar, cut into cubes*
8oz Monterey Jack, Pepper Jack, or Velveeta depending on preference, cut into cubes*
Scant 1/2 c Frank’s hot sauce (to taste)
1/2 tsp pepper
2/3 c blue cheese dressing
1/3 c blue cheese crumbles
*Do not use shredded cheese. It will not melt properly!
Cook and drain macaroni according to package instructions. Preheat oven to 350°. Melt butter. Add flour and cook for 2 minutes.
Add warmed chicken stock and cook for 5 minutes.
Add warmed heavy cream and cook for 5 minutes.
Add cheese (except blue cheese crumbles), cooking until melted.
Stir in hot sauce, blue cheese dressing, and blue cheese crumbles. Add chicken and macaroni. Sauce will be thin, but thickens as it sets. Cover and bake for 30 minutes.
